How to Use Taha'a Vanilla in Cooking

The Basic Technique

Split the pod lengthways with the tip of a knife, then scrape out the seeds. Add both seeds AND pod to a warm preparation (milk, cream, syrup) and leave to infuse off the heat.

In Baking and Desserts

Custard, panna cotta, rice pudding, ice cream, financiers: Taha'a vanilla elevates all the classics. Its floral fragrance does not withstand intense heat well - favour infusion.

And in Savoury Cooking

Dare to use vanilla with white fish, scallops, poultry or a marinade: a few seeds are enough to add a surprising roundness.

Do Not Throw Away the Pod

After infusing, rinse and dry the pod, then plunge it into a jar of sugar to make a fragrant homemade vanilla sugar.
